The Mouneh House reimagines mouneh, the traditional Arabic practice of preserving seasonal ingredients, as a contemporary community food hub. Rooted in sustainability, cultural continuity and shared knowledge, the project transforms preservation from a domestic ritual into a collective spatial experience.
Located within the historic Granton Station, the project responds to increasing levels of food waste by reconnecting people with the origins of their food and their relationship with the natural world. The interior guides users through processes of food production and consumption, from harvest and preparation to preservation, reinforcing openness, transparency and exchange while encouraging a deeper awareness of sustainable food practices and collective responsibility.
The programme brings together workshop spaces, dining areas and a community-led pantry, supporting learning, making and sharing, whilst positioning visitors as active participants rather than passive observers. Blending cultural practice with contemporary design, The Mouneh House proposes a more conscious and connected relationship with food, one that values time, resource and shared experience while strengthening connections between people, place and environment.
